You could either create a checkpoint which means pausing to wait for it to cool down or use a lower workload profile, e.g -w 2
EDIT: stopping hashcat only on the overheated GPU is not possible, if there are more devices involved than the overheating GPU (at least AFAIK)

Just wonder is it real to stop send tasks on overheating gpu and continue send to others
