Will Hashcat work with an AMD ryzen 5 3600 and an GTX 1660 OC GPU?

Sure, you just need the corresponding drivers. For the 1660, you need the NVIDIA drivers and in case you also want to use your CPU for cracking, you need the "OpenCL Runtime for Intel Core and Intel Xeon Processors" (yes, Intel software for AMD hardware, no mistake here).
