if you don't specify a mask hashcat will use a default one. One that is not full brute force.

the mask depens on what candidates you want to test, not on your hashing scheme.

True Image or similar backup programs won't work. You need a sector-by-sector copy like done with dd.

you need to define a custom charset and a mask. Currently your mask is "abcdef0123456789".
